Ingredients
  

  • 2 salmon fillets
  • 400 g baby potatoes halved
  • 1 broccoli head cut into florets
  • 3 tbsp olive oil
  • 3 tbsp unsalted butter
  • 2 cloves garlic minced
  • 1 lemon juiced
  • 0.5 lemon zest
  • salt to taste
  • black pepper to taste

Method
 

  1. Preheat oven to 200°C (400°F).
  2. Toss potatoes with olive oil, salt, and pepper. Roast for 20 minutes.
  3. Add broccoli to tray and roast 10 minutes.
  4. Season salmon with salt and pepper. Add to tray and bake 10–12 minutes.
  5. Melt butter, add garlic, lemon juice, and zest.
  6. Drizzle sauce over salmon and vegetables before serving.

Notes

Adjust cooking time based on salmon thickness. For extra crispiness, avoid overcrowding vegetables.
