Ingredients
  

Chicken and Marinade
  • 8 bone-in skin-on chicken thighs about 3-4 lbs
  • 0.25 cup extra virgin olive oil
  • 2 large lemons juice and zest
  • 6 cloves garlic minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp paprika optional
  • salt and black pepper to taste
  • 0.5 cup chicken broth
Garnish
  • fresh parsley chopped

Method
 

  1. Preheat oven to 425°F. Pat chicken dry.
  2. Whisk olive oil, lemon juice/zest, garlic, herbs, and seasonings.
  3. Marinate chicken in mixture for 15-30 minutes.
  4. Arrange skin-side up on baking sheet. Bake 35-45 minutes until 165°F.
  5. Broil 2-3 minutes for extra crisp if desired. Rest, garnish, and serve.

Notes

Use fresh lemons for best flavor. Baste with pan juices for moisture.
