Ingredients
  

Pasta
  • 300 g pasta
  • 1 cup ricotta cheese
  • 2 cups fresh spinach
  • 2 cloves garlic minced
  • 1 lemon zest and juice
  • 2 tbsp olive oil
  • 0.5 cup parmesan cheese grated
  • 0.25 cup pasta water reserved

Method
 

  1. Cook pasta in salted boiling water until al dente. Reserve pasta water and drain.
  2. Heat olive oil in a pan and sauté garlic until fragrant.
  3. Add spinach and cook until wilted.
  4. Stir in ricotta cheese and mix until creamy.
  5. Add lemon zest and juice, then mix well.
  6. Pour in pasta water gradually to loosen the sauce.
  7. Add cooked pasta and toss to coat evenly.
  8. Stir in parmesan, season, and serve immediately.

Notes

Use fresh lemon juice for best flavor and adjust consistency with pasta water as needed.
