Ingredients
  

Meatballs
  • 1 lb ground beef or lamb
  • 0.25 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic minced
  • 2 tbsp parsley chopped
  • 1 tsp oregano
  • 0.5 tsp cumin
  • 0.5 tsp paprika
Orzo & Sauce
  • 2 tbsp olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 cup orzo
  • 2.5 cups chicken broth
  • 1 lemon zest
  • 2 lemons juiced
  • 0.5 cup feta cheese crumbled

Equipment

Method
 

  1. Mix meatball ingredients and shape into small balls.
  2. Cook meatballs in oil until browned and cooked through, then remove.
  3. Sauté onion and garlic, then add orzo and toast briefly.
  4. Add broth, zest, and seasoning; simmer until orzo is tender.
  5. Stir in lemon juice, return meatballs, and mix gently.
  6. Top with feta and herbs before serving.

Notes

Adjust lemon juice to taste for desired brightness.
