- Combine olive oil, oregano, paprika, garlic powder, salt, pepper, and lemon juice. Coat chicken with the mixture.
- Cook chicken in a skillet over medium-high heat for 5–7 minutes per side until fully cooked.
- Let chicken rest for 5 minutes before slicing.
- Mix Greek yogurt, grated cucumber, garlic, lemon juice, olive oil, dill, and salt to make tzatziki.
- Divide cooked rice into bowls.
- Top with sliced chicken, tomatoes, cucumber, red onion, olives, and feta.
- Spoon tzatziki sauce over the bowls and garnish with herbs.
Notes
Squeeze excess water from grated cucumber to keep the tzatziki thick and creamy.
