Ingredients
  

Chicken
  • 1 lb chicken breasts or thighs
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 0.5 tsp garlic powder
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 lemon juiced
Tzatziki Sauce
  • 1 cup Greek yogurt
  • 0.5 cucumber grated
  • 2 cloves garlic minced
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tbsp fresh dill chopped
  • 0.25 tsp salt
Bowl Base
  • 2 cups cooked rice
  • 1 cup cherry tomatoes halved
  • 1 cucumber sliced
  • 0.25 red onion thinly sliced
  • 0.5 cup kalamata olives
  • 0.5 cup feta cheese crumbled

Equipment

Method
 

  1. Combine olive oil, oregano, paprika, garlic powder, salt, pepper, and lemon juice. Coat chicken with the mixture.
  2. Cook chicken in a skillet over medium-high heat for 5–7 minutes per side until fully cooked.
  3. Let chicken rest for 5 minutes before slicing.
  4. Mix Greek yogurt, grated cucumber, garlic, lemon juice, olive oil, dill, and salt to make tzatziki.
  5. Divide cooked rice into bowls.
  6. Top with sliced chicken, tomatoes, cucumber, red onion, olives, and feta.
  7. Spoon tzatziki sauce over the bowls and garnish with herbs.

Notes

Squeeze excess water from grated cucumber to keep the tzatziki thick and creamy.
