Ingredients
  

Earl Grey Cake
  • 3 cups all-purpose flour
  • 1 tbsp baking powder
  • 0.5 tsp salt
  • 1 cup unsalted butter softened
  • 1.75 cups granulated sugar
  • 4 eggs large
  • 2 tsp vanilla extract
  • 1 cup milk Earl Grey–infused
  • 4 bags Earl Grey tea for steeping
London Fog Frosting
  • 1.5 cups unsalted butter softened
  • 4 cups powdered sugar
  • 2 tsp vanilla extract
  • 0.25 cup heavy cream Earl Grey–infused

Equipment

Method
 

  1. Warm milk and steep Earl Grey tea for 10 minutes. Cool fully.
  2. Preheat oven to 350°F (175°C) and prepare cake pans.
  3. Whisk flour, baking powder, and salt in a bowl.
  4. Cream butter and sugar, then add eggs and vanilla.
  5. Alternate adding dry ingredients and Earl Grey milk until batter forms.
  6. Bake 28–32 minutes, then cool completely.
  7. Prepare frosting by steeping cream with Earl Grey and whipping with butter, sugar, and vanilla.
  8. Assemble cake and frost with Earl Grey buttercream.

Notes

Steeping the tea longer creates a deeper London Fog flavor without bitterness when kept below boiling.
