Ingredients
  

  • 1 lb frozen or fresh fries
  • 2 tbsp vegetable oil if baking fresh fries
  • 1 tsp salt
  • 8 oz smoked sausage sliced into rounds
  • 1 cup shredded cheddar cheese
  • 0.5 cup shredded pepper jack cheese optional
  • 3 green onions sliced
  • 1 tsp Cajun seasoning
  • 0.5 tsp garlic powder
  • 0.25 cup mayonnaise
  • 2 tbsp hot sauce
  • 1 tsp smoked paprika
  • 0.5 tsp cayenne pepper
  • 1 tsp lemon juice

Method
 

  1. Bake fries according to package or cook fresh fries with oil and salt until crispy.
  2. Sauté sliced smoked sausage until slightly crisped.
  3. Spread fries on a baking sheet and sprinkle with Cajun seasoning and garlic powder.
  4. Layer cheddar and pepper jack cheese over fries, then top with sausage slices.
  5. Broil 2–3 minutes until cheese melts.
  6. Mix mayonnaise, hot sauce, smoked paprika, cayenne, lemon juice, and salt to make Cajun sauce.
  7. Drizzle Cajun sauce over fries and top with sliced green onions.
  8. Serve immediately.
