- Bake fries according to package or cook fresh fries with oil and salt until crispy.
- Sauté sliced smoked sausage until slightly crisped.
- Spread fries on a baking sheet and sprinkle with Cajun seasoning and garlic powder.
- Layer cheddar and pepper jack cheese over fries, then top with sausage slices.
- Broil 2–3 minutes until cheese melts.
- Mix mayonnaise, hot sauce, smoked paprika, cayenne, lemon juice, and salt to make Cajun sauce.
- Drizzle Cajun sauce over fries and top with sliced green onions.
- Serve immediately.
