Ingredients
  

Main
  • 500 g chicken cut into pieces
  • 1 mango ripe and diced
  • 1 cup coconut milk
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 tbsp ginger grated
  • 2 tbsp oil
Spices
  • 1 tsp curry powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 0.5 tsp chili powder
  • to taste salt and pepper
Finish
  • 0.5 lime juiced
  • 2 tbsp cilantro chopped

Equipment

  • Large pan
  • Knife

  • Wooden spoon

Method
 

  1. Heat oil and sauté onion until soft. Add garlic and ginger.
  2. Add spices and cook until fragrant.
  3. Add chicken and cook until lightly browned.
  4. Stir in mango and coconut milk.
  5. Simmer for 15–20 minutes until cooked through.
  6. Add lime juice and adjust seasoning.
  7. Garnish with cilantro and serve.

Notes

Use ripe mango for best sweetness and balance.
