Mango & Dragon Fruit Chia Pudding

Ingredients
  

Chia Pudding Base
  • 0.5 cup chia seeds
  • 2 cups coconut milk full-fat or light
  • 2 tbsp honey or maple syrup/agave
  • 1 tsp vanilla extract
  • pinch of salt
Mango Layer
  • 2 large ripe mangoes peeled and cubed, about 2 cups
  • 1 tbsp honey optional
Dragon Fruit Layer
  • 1 large pink dragon fruit peeled and cubed, about 1-1.5 cups
  • fresh mango cubes for garnish
  • dragon fruit balls for garnish
  • fresh mint leaves for garnish

Equipment

  • Mixing bowl or jar
  • Blender or food processor
  • Whisk
  • Clear glasses or bowls for serving

Method
 

  1. Combine chia seeds, coconut milk, sweetener, vanilla, and salt in a bowl. Whisk well.
  2. Let sit 5 minutes, whisk again to prevent clumps. Cover and refrigerate 4+ hours or overnight.
  3. Blend mango cubes until smooth. Add lime juice or honey if desired. Set aside.
  4. Blend dragon fruit until smooth. Blend pink and white separately if using both.
  5. Stir thickened chia pudding. Adjust consistency with extra milk if needed.
  6. Layer in glasses: chia pudding, mango puree, chia, dragon fruit puree. Repeat as desired.
  7. Top with fresh fruit cubes, mint, and coconut flakes. Serve chilled.

Notes

Prepare in advance for best texture. Use ripe fruit for natural sweetness. Store refrigerated up to 4 days.
