Method
- Combine chia seeds, coconut milk, sweetener, vanilla, and salt in a bowl. Whisk well.
- Let sit 5 minutes, whisk again to prevent clumps. Cover and refrigerate 4+ hours or overnight.
- Blend mango cubes until smooth. Add lime juice or honey if desired. Set aside.
- Blend dragon fruit until smooth. Blend pink and white separately if using both.
- Stir thickened chia pudding. Adjust consistency with extra milk if needed.
- Layer in glasses: chia pudding, mango puree, chia, dragon fruit puree. Repeat as desired.
- Top with fresh fruit cubes, mint, and coconut flakes. Serve chilled.
Notes
Prepare in advance for best texture. Use ripe fruit for natural sweetness. Store refrigerated up to 4 days.
