Ingredients
  

Mango Components
  • 2-3 large ripe mangoes for puree, dicing, and topping
  • 0.5 cup mango juice or nectar for soaking
Cream
  • 2 cans (13.5 oz each) full-fat coconut milk or cream chilled overnight
  • 0.5 cup powdered sugar adjust to taste
  • 2 tsp vanilla extract
  • 1-2 tbsp lime juice optional
Assembly
  • 1 package (7-8 oz) vegan ladyfingers
  • fresh mango slices for topping

Equipment

  • Hand mixer or whisk
  • Mixing bowls
  • 9x9-inch dish or trifle bowl
  • Blender for puree

Method
 

  1. Prepare mango puree and diced pieces. Mix some puree with juice for soaking liquid.
  2. Whip chilled coconut cream with sugar, vanilla, and lime until fluffy. Fold in mango puree.
  3. Quickly dip ladyfingers in mango soak and layer in dish.
  4. Spread cream layer, add diced mango. Repeat layers.
  5. Top with cream, chill 4+ hours. Garnish with mango before serving.

Notes

Use ripe mangoes for best flavor. Chill time is crucial for set texture.
