Ingredients
  

  • 6 oz dark chocolate chopped
  • 1.5 cups heavy whipping cream
  • 1 tsp vanilla extract
  • 1.5 cups raspberries fresh or frozen
  • 2 tbsp granulated sugar
  • 1 tsp lemon juice

Equipment

  • Mixing bowls
  • Hand mixer or stand mixer
  • Saucepan

Method
 

  1. Melt chocolate and allow to cool slightly.
  2. Whip cream to soft peaks and fold in chocolate and vanilla.
  3. Cook raspberries, sugar, and lemon juice until soft. Cool.
  4. Layer mousse and raspberry sauce into cups.
  5. Chill at least 2 hours before serving.

Notes

Best served well chilled with fresh garnish.
