Ingredients
  

Chicken
  • 2 chicken breasts cut into pieces
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp oregano
  • 0.5 tsp garlic powder
Vegetables
  • 4 cups cauliflower rice
  • 1 cup cherry tomatoes halved
  • 0.5 cup Kalamata olives sliced
  • 0.5 red onion chopped
  • 3 cloves garlic minced
Finish
  • 1 lemon juiced
  • 0.25 cup parsley chopped
  • 0.25 cup feta cheese crumbled

Method
 

  1. Season chicken with spices and olive oil.
  2. Cook chicken in skillet until golden and cooked through, then remove.
  3. Sauté onion and garlic in the same pan.
  4. Add cauliflower rice and cook until tender.
  5. Stir in tomatoes and olives.
  6. Return chicken to pan and mix well.
  7. Finish with lemon juice, parsley, and feta before serving.

Notes

Avoid overcooking cauliflower rice to maintain the best texture.
