Mediterranean Chicken Gyros with Creamy Feta Tzatziki

Ingredients
  

Chicken Marinade
  • 1.5 lbs boneless skinless chicken thighs
  • 1 cup plain Greek yogurt
  • 3 tbsp extra-virgin olive oil
  • juice and zest of 2 lemons
  • 4 cloves garlic minced
  • 2 tsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp paprika
  • salt and black pepper to taste
Creamy Feta Tzatziki
  • 1.5 cups plain Greek yogurt
  • 4 oz feta cheese crumbled
  • 1 large cucumber grated and squeezed dry
  • 2 cloves garlic minced
  • 2 tbsp fresh dill chopped
  • juice of 1 lemon
  • 1 tbsp extra-virgin olive oil
  • salt and pepper to taste
For Serving
  • 8-10 pita breads warmed
  • 2 tomatoes sliced
  • 1 red onion thinly sliced
  • 1 cucumber thinly sliced

Equipment

  • Mixing bowls
  • Grill pan or skillet

Method
 

  1. Whisk marinade ingredients in a bowl: yogurt, oil, lemon, garlic, herbs, spices, salt, pepper.
  2. Add chicken, coat well, marinate 30 minutes to overnight.
  3. Make tzatziki: Mix yogurt, feta, drained cucumber, garlic, dill, lemon, oil, salt, pepper. Chill.
  4. Cook chicken on hot grill/skillet 5-7 min per side until 165°F. Rest and slice.
  5. Warm pitas. Spread tzatziki, add chicken and toppings, roll up.
  6. Serve with extra tzatziki and lemon wedges.

Notes

Marinate longer for deeper flavor. Squeeze cucumber well for thick tzatziki.
