Ingredients
  

Sea Bass
  • 4 sea bass fillets
  • 2 tbsp olive oil
Sauce
  • 3 tbsp olive oil
  • 3 cloves garlic minced
  • 1 cup cherry tomatoes halved
  • 0.33 cup olives
  • 2 tbsp capers
  • 1 lemon juice
  • 1 lemon zest
  • 1 tsp oregano
  • 2 tbsp parsley chopped

Method
 

  1. Season and sear sea bass until golden and cooked through, then remove.
  2. Sauté garlic, tomatoes, olives, and capers.
  3. Add lemon juice, zest, and seasoning, then simmer briefly.
  4. Return fish to pan, spoon sauce over, and serve.
