  • 1 cup rice
  • 2 cups vegetable broth
  • 1 can beans drained
  • 2 tbsp olive oil
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 cup tomatoes diced
  • 1 tsp cumin
  • 1 tsp paprika
  • 0.5 tsp oregano

Method
 

  1. Cook rice in broth.
  2. Sauté onion and garlic.
  3. Add tomatoes and spices.
  4. Stir in beans.
  5. Combine with rice and finish with herbs.

Notes
