Ingredients
  

Steak & Marinade
  • 1.5 lbs flank steak
  • 3 tbsp olive oil divided
  • juice of 2 lemons divided
  • 4 garlic cloves minced, divided
  • 2 tsp dried oregano
  • 1 tsp smoked paprika
  • salt and pepper to taste
Bowl Components
  • 2 cups cherry tomatoes halved
  • 1 large cucumber diced
  • 0.5 red onion thinly sliced
  • 0.5 cup kalamata olives halved
  • 1 cup hummus
  • 0.5 cup feta cheese crumbled
  • 1 cup Greek yogurt plain
  • 1 tbsp fresh dill chopped

Equipment

  • Grill pan or skillet
  • Mixing bowls
  • Tongs
  • Knife

Method
 

  1. Marinate steak with oil, lemon, garlic, oregano, paprika, salt, pepper for 20-30 min.
  2. Mix yogurt, garlic, lemon, dill, salt for tzatziki.
  3. Prep veggies: halve tomatoes, dice cucumber, slice onion/olives.
  4. Grill steak 4-6 min per side to medium-rare, rest, slice.
  5. Assemble bowls with base, hummus, veggies, feta, steak.
  6. Drizzle tzatziki, garnish, serve.

Notes

Rest steak before slicing. Adjust lemon/garlic to taste.
