Ingredients
  

Salmon
  • 1.5 lb salmon fillets skin removed
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • 0.5 tsp smoked paprika
  • 1 lemon zest and juice
Taco Assembly
  • 8 small tortillas
  • 1 cup cherry tomatoes diced
  • 1 cup cucumber diced
  • 0.25 cup red onion thinly sliced
  • 0.5 cup feta cheese crumbled
Tzatziki
  • 1 cup Greek yogurt
  • 0.5 cup cucumber grated and drained
  • 1 clove garlic minced
  • 1 tbsp lemon juice

Equipment

  • Skillet or grill pan
  • Mixing bowls
  • Microplane or grater

Method
 

  1. Season salmon with olive oil, garlic, oregano, paprika, lemon, salt, and pepper.
  2. Cook salmon in a skillet until flaky.
  3. Warm tortillas.
  4. Assemble tacos with salmon, vegetables, tzatziki, and feta.

Notes

Serve with extra lemon wedges for brightness.
