Ingredients
  

Cookie Dough
  • 1 cup unsalted butter softened
  • 0.5 cup powdered sugar
  • 2 cups all-purpose flour
  • 0.25 tsp salt
  • 2 tbsp orange zest from 2 large oranges
  • 1 tbsp fresh orange juice optional
  • 0.75 cup dried cranberries chopped
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 325°F (165°C). Line baking sheets with parchment paper.
  2. Cream butter and powdered sugar until light and fluffy.
  3. Add orange zest, juice, and vanilla; mix well.
  4. Whisk flour and salt; gradually add to wet mixture until dough forms.
  5. Fold in chopped cranberries.
  6. Shape dough into logs, wrap, and chill for 30 minutes.
  7. Slice into rounds and place on baking sheets.
  8. Bake 12-15 minutes until edges are lightly golden. Cool on wire rack.

Notes

Chill dough for easier slicing; store in airtight container.
