Ingredients
  

  • 3 lb beef chuck roast
  • 2 tbsp olive oil
  • 1 onion sliced
  • 3 carrots chunked
  • 4 cloves garlic
  • 3 cups beef broth
  • 1.5 cups arborio rice
  • 0.75 cup Parmesan cheese grated

Method
 

  1. Brown seasoned beef and remove.
  2. Sauté vegetables and deglaze with broth.
  3. Braise beef until tender.
  4. Prepare risotto slowly with warm broth.
  5. Serve pot roast over risotto.
