Ingredients
  

Slaw
  • 4 cups green cabbage shredded
  • 1 cup red cabbage shredded
  • 1 cup corn kernels
  • 1 cup cherry tomatoes halved
  • 0.25 cup red onion thinly sliced
  • 0.25 cup fresh cilantro chopped
Lime Dressing
  • 3 tbsp lime juice fresh
  • 2 tbsp olive oil
  • 1 tsp honey
  • 1 clove garlic minced
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Combine green cabbage and red cabbage in a large bowl.
  2. Add corn, cherry tomatoes, red onion, and cilantro.
  3. Whisk together lime juice, olive oil, honey, garlic, salt, and pepper.
  4. Pour dressing over slaw mixture.
  5. Toss until vegetables are evenly coated.
  6. Chill for at least 20 minutes before serving.
