Ingredients
  

  • 12 oz short pasta rotini or shells
  • 4 ears corn fresh
  • 0.75 cup mayonnaise
  • 0.25 cup sour cream
  • 2 tbsp lime juice fresh
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 0.75 cup cotija cheese crumbled

Method
 

  1. Cook pasta and cool.
  2. Char corn and cut kernels.
  3. Mix dressing ingredients.
  4. Combine pasta, corn, and dressing.
  5. Fold in cheese and garnish.
