Method
- Preheat oven to 400°F (200°C). Mix ground beef, pork, breadcrumbs, eggs, garlic, parmesan, parsley, salt, pepper, oregano, and Italian seasoning.
- Form mixture into 1½-inch meatballs and place on a parchment-lined baking sheet.
- Bake meatballs 15–20 minutes until cooked through.
- Simmer baked meatballs in marinara sauce for 10 minutes.
- Slice mini sub rolls lengthwise and lightly toast if desired.
- Place 2–3 meatballs per roll, spoon sauce over, and top with shredded mozzarella.
- Broil 2–3 minutes until cheese is melted and bubbly.
- Garnish with parsley and serve immediately.
Notes
Meatballs can be prepared ahead and stored in marinara sauce in the fridge up to 3 days.
