Mini Italian Meatball Subs

Tender homemade meatballs simmered in marinara sauce, topped with mozzarella and parmesan on soft mini sub rolls.

Ingredients
  

Meatballs
  • 1 lb ground beef
  • 1 lb ground pork
  • 1 cup breadcrumbs
  • 2 each eggs lightly beaten
  • 2 cloves garlic minced
  • 0.5 cup parmesan cheese grated
  • 0.25 cup fresh parsley chopped
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp dried oregano
  • 1 tsp Italian seasoning
Assembly
  • 3 cups marinara sauce
  • 12 mini sub rolls
  • 2 cups mozzarella cheese shredded
  • optional parmesan or fresh parsley for garnish

Equipment

  • Mixing bowl

Method
 

  1. Preheat oven to 400°F (200°C). Mix ground beef, pork, breadcrumbs, eggs, garlic, parmesan, parsley, salt, pepper, oregano, and Italian seasoning.
  2. Form mixture into 1½-inch meatballs and place on a parchment-lined baking sheet.
  3. Bake meatballs 15–20 minutes until cooked through.
  4. Simmer baked meatballs in marinara sauce for 10 minutes.
  5. Slice mini sub rolls lengthwise and lightly toast if desired.
  6. Place 2–3 meatballs per roll, spoon sauce over, and top with shredded mozzarella.
  7. Broil 2–3 minutes until cheese is melted and bubbly.
  8. Garnish with parsley and serve immediately.

Notes

Meatballs can be prepared ahead and stored in marinara sauce in the fridge up to 3 days.
