Ingredients
  

Cookie Cups
  • 1.5 cups all-purpose flour
  • 0.5 cup unsalted butter softened
  • 0.5 cup granulated sugar
  • 1 egg large
  • 1 tsp vanilla extract
Filling
  • 8 oz mascarpone cheese softened
  • 0.5 cup powdered sugar
  • 2 tbsp espresso cooled
  • 1 tsp vanilla extract
  • 2 tbsp cocoa powder for dusting

Equipment

  • Mini muffin pan
  • Mixing bowls
  • Hand mixer

Method
 

  1. Cream butter and sugar, then mix in egg and vanilla.
  2. Mix in flour to form dough.
  3. Press dough into mini muffin pan and bake until lightly golden.
  4. Beat mascarpone with powdered sugar, espresso, and vanilla.
  5. Fill cooled cookie cups and dust with cocoa powder.

Notes

Fill cookie cups close to serving for best texture.
