Miso Glazed Melting Sweet Potatoes

Caramelized, buttery sweet potatoes finished with a glossy miso-maple glaze. A stunning and modern Easter side dish.

Ingredients
  

Sweet Potatoes
  • 3 large sweet potatoes peeled and sliced into 1.5-inch rounds
  • 4 tbsp unsalted butter melted
  • 2 tbsp avocado oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Miso Glaze
  • 2 tbsp white miso paste
  • 2 tbsp maple syrup
  • 1 tbsp soy sauce
  • 1 tbsp unsalted butter melted
  • 1 tsp sesame oil
  • 1 garlic clove grated
  • 1 tsp rice vinegar optional
Garnish
  • sesame seeds
  • chopped chives

Equipment

Method
 

  1. Preheat oven to 425°F (220°C). Peel and slice sweet potatoes into thick rounds.
  2. Place potatoes on a baking sheet and brush with melted butter and oil. Season with salt and pepper.
  3. Roast for 25 minutes, flip, then roast 15–20 minutes until caramelized and tender.
  4. Whisk miso, maple syrup, soy sauce, butter, sesame oil, garlic, and rice vinegar.
  5. Brush glaze over potatoes and roast 5–7 minutes until sticky and glossy.
  6. Garnish with sesame seeds and chives. Serve warm.

Notes

For a spicier glaze, add 1 teaspoon sriracha or chili paste.
