Method
- Preheat oven to 425°F (220°C). Peel and slice sweet potatoes into thick rounds.
- Place potatoes on a baking sheet and brush with melted butter and oil. Season with salt and pepper.
- Roast for 25 minutes, flip, then roast 15–20 minutes until caramelized and tender.
- Whisk miso, maple syrup, soy sauce, butter, sesame oil, garlic, and rice vinegar.
- Brush glaze over potatoes and roast 5–7 minutes until sticky and glossy.
- Garnish with sesame seeds and chives. Serve warm.
Notes
For a spicier glaze, add 1 teaspoon sriracha or chili paste.
