Banana Bread Batter
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 0.5 tsp salt
  • 1.5 tsp ground ginger
  • 1 tsp cinnamon
  • 0.25 tsp nutmeg
  • 0.25 tsp cloves
  • 0.5 cup unsalted butter softened
  • 0.75 cup brown sugar packed
  • 2 eggs large
  • 1.25 cups mashed ripe bananas
  • 0.25 cup molasses
  • 1 tsp vanilla extract
Cinnamon Sugar Crust
  • 2 tbsp granulated sugar
  • 1 tsp cinnamon
  • 1 tbsp butter melted

Method
 

  1. Preheat oven to 350°F (175°C) and prepare loaf pan.
  2. Whisk together dry ingredients in a bowl.
  3. Cream butter and brown sugar until fluffy.
  4. Mix in eggs, bananas, molasses, and vanilla.
  5. Fold in dry ingredients until just combined.
  6. Pour batter into pan, brush with butter, and sprinkle cinnamon sugar.
  7. Bake 55–65 minutes until set.
  8. Cool before slicing.

Notes

Cover loosely if top browns too quickly.
