Method
- Heat olive oil and sauté sofrito, onion, garlic, and bell pepper.
- Add tomato sauce, sazón, adobo, oregano, and bay leaf.
- Stir in pink beans with liquid and water; simmer 20–30 minutes.
- For the rice, sauté rice in olive oil for 1 minute.
- Add water, salt, sazón, and sofrito; bring to a boil.
- Cover and simmer 18 minutes; rest 10 minutes before fluffing.
Notes
If beans thicken too much, add water. Rice can be seasoned with extra sofrito for deeper flavor.
