- In a bowl, combine softened butter and brown sugar until smooth. Add vanilla extract and mix.
- Stir in almond flour or oats until soft dough forms. Fold in mini chocolate chips.
- Roll dough into 1-inch bite-sized balls and place on a parchment-lined tray.
- Refrigerate dough balls for 20–30 minutes to firm.
- Melt chocolate and coconut oil in microwave or double boiler until smooth.
- Dip chilled cookie dough balls into chocolate and return to parchment.
- Refrigerate chocolate-coated bites for 10–15 minutes until set.
