Ingredients
  

Cookie Dough Bites
  • 1 cup almond flour or finely ground oats
  • 0.5 cup unsalted butter softened
  • 0.33 cup brown sugar
  • 1 tsp vanilla extract
  • 0.5 cup mini chocolate chips
Chocolate Coating
  • 1 cup semi-sweet or milk chocolate chopped or chips
  • 1 tsp coconut oil optional, for smooth coating

  • Parchment paper
  • Microwave or double boiler
  • Fork or toothpick

Method
 

  1. In a bowl, combine softened butter and brown sugar until smooth. Add vanilla extract and mix.
  2. Stir in almond flour or oats until soft dough forms. Fold in mini chocolate chips.
  3. Roll dough into 1-inch bite-sized balls and place on a parchment-lined tray.
  4. Refrigerate dough balls for 20–30 minutes to firm.
  5. Melt chocolate and coconut oil in microwave or double boiler until smooth.
  6. Dip chilled cookie dough balls into chocolate and return to parchment.
  7. Refrigerate chocolate-coated bites for 10–15 minutes until set.

Notes

Store in an airtight container in the fridge for up to 5 days.
