Ingredients
  

Crust
  • 2 cups chocolate cookie crumbs
  • 0.5 cup unsalted butter melted
Filling
  • 8 oz cream cheese softened
  • 1 box instant chocolate pudding mix
  • 1.5 cups cold milk
  • 8 oz whipped topping thawed
  • 1 tsp vanilla extract
Coconut-Pecan Topping
  • 0.5 cup unsalted butter
  • 0.75 cup brown sugar packed
  • 0.5 cup heavy cream
  • 1.5 cups sweetened shredded coconut
  • 1 cup chopped pecans
  • 1 tsp vanilla extract

Method
 

  1. Combine cookie crumbs and melted butter; press into pie dish and chill.
  2. Beat cream cheese until smooth; add pudding mix, milk, and vanilla.
  3. Fold in whipped topping and spread filling over crust.
  4. Cook butter, brown sugar, and cream until thickened.
  5. Stir in coconut, pecans, and vanilla; cool slightly.
  6. Spread topping over filling and chill 4 hours or until set.

Notes

Chill overnight for best slicing results.
