Ingredients
  

  • 2 cups Biscoff cookies crushed
  • 6 tbsp unsalted butter melted
  • 16 oz cream cheese softened
  • 0.75 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream cold
  • 0.75 cup Biscoff spread melted slightly

Equipment

  • Muffin tin or mini cheesecake pan
  • Electric mixer

Method
 

  1. Mix crushed cookies with melted butter and press into molds.
  2. Beat cream cheese, sugar, and vanilla until smooth.
  3. Whip cream to stiff peaks and fold into cheesecake mixture.
  4. Fill crusts and chill at least 4 hours.
  5. Top with melted Biscoff before serving.

Notes

Chill overnight for best results.
