Ingredients
  

Beef Stew
  • 2 lb beef chuck cut into cubes
  • 0.25 cup all-purpose flour
  • 2 tbsp olive oil
  • 1 onion chopped
  • 3 cloves garlic minced
  • 2 tbsp tomato paste
  • 4 cups beef broth
  • 2 tbsp Worcestershire sauce
  • 2 bay leaves
  • 1 tsp thyme
  • 3 carrots sliced
  • 3 potatoes cubed

Equipment

  • Dutch oven or heavy pot
  • Wooden spoon
  • Knife and cutting board

Method
 

  1. Season and flour beef cubes.
  2. Brown beef in batches and set aside.
  3. Cook onion and garlic; stir in tomato paste.
  4. Return beef to pot and add broth, herbs, and sauce.
  5. Simmer covered for 90 minutes.
  6. Add vegetables and simmer 30–45 minutes more.

Notes

Stew thickens more as it cools.
