- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Add potatoes and carrots to the pan, drizzle with olive oil, season lightly, and toss well.
- Roast potatoes and carrots for 15 minutes first.
- Whisk together honey, garlic, Dijon mustard, paprika, onion powder, salt, pepper, and remaining olive oil.
- Remove pan from oven and add kielbasa, broccoli, and bell pepper.
- Pour sauce over everything and toss carefully to coat.
- Return to oven and roast 20–25 minutes, stirring halfway through.
- Garnish with parsley and optional red pepper flakes before serving.
Notes
Roast potatoes first for even cooking. For extra crispiness, broil the finished dish for 2–3 minutes before serving.
