  • 14 ounces kielbasa sausage sliced into rounds
  • 1 pound baby potatoes halved
  • 2 cups broccoli florets
  • 2 large carrots sliced
  • 1 red bell pepper chopped
  • 3 tbsp olive oil
Honey Garlic Sauce
  • 0.25 cup honey
  • 4 cloves garlic minced
  • 1 tbsp Dijon mustard
  • 1 tsp paprika
  • 0.5 tsp onion powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Garnish
  • 2 tbsp fresh parsley chopped
  • 1 red pepper flakes optional

Equipment

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Add potatoes and carrots to the pan, drizzle with olive oil, season lightly, and toss well.
  3. Roast potatoes and carrots for 15 minutes first.
  4. Whisk together honey, garlic, Dijon mustard, paprika, onion powder, salt, pepper, and remaining olive oil.
  5. Remove pan from oven and add kielbasa, broccoli, and bell pepper.
  6. Pour sauce over everything and toss carefully to coat.
  7. Return to oven and roast 20–25 minutes, stirring halfway through.
  8. Garnish with parsley and optional red pepper flakes before serving.

Notes

Roast potatoes first for even cooking. For extra crispiness, broil the finished dish for 2–3 minutes before serving.
