  • 1 lb chicken breast cut into cubes
  • 1 cup orzo pasta
  • 8 oz mushrooms sliced
  • 3 cloves garlic minced
  • 0.5 onion chopped
  • 2 cups chicken broth
  • 2 tbsp olive oil
  • 0.5 tsp salt
  • 0.5 tsp black pepper
Finishing Touches
  • 0.25 cup parmesan cheese grated
  • 2 tbsp parsley chopped
  • 1 tbsp butter optional

Method
 

  1. Cook chicken in olive oil until lightly browned and set aside.
  2. Sauté mushrooms and onion until softened.
  3. Add garlic and cook briefly.
  4. Stir in orzo and toast for 1 minute.
  5. Add chicken broth and return chicken to skillet.
  6. Simmer until orzo is tender.
  7. Stir in parmesan and butter until creamy.
  8. Garnish with parsley and serve.
