Ingredients
  

Main Pasta
  • 12 ounces pasta spaghetti, linguine, or fettuccine
  • 4 tbsp unsalted butter
  • 1 tbsp olive oil
  • 6 cloves garlic minced
  • 3 cups chicken broth or vegetable broth
  • 1 cup heavy cream
  • 1 cup freshly grated parmesan cheese
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp red pepper flakes optional
Garnish
  • 2 tbsp fresh parsley chopped
  • 1 extra parmesan for serving

Method
 

  1. Heat olive oil and 2 tablespoons butter in a large skillet over medium heat.
  2. Add garlic and cook for 1–2 minutes until fragrant.
  3. Pour in broth and heavy cream, then add salt, pepper, and red pepper flakes if using.
  4. Add uncooked pasta directly into the pot and ensure it is mostly submerged.
  5. Bring to a gentle boil, then reduce heat to medium-low.
  6. Cook uncovered for 10–12 minutes, stirring occasionally, until pasta is tender.
  7. Stir in remaining butter and parmesan cheese until melted and creamy.
  8. Continue stirring until the sauce becomes silky and coats the pasta.
  9. Garnish with parsley and extra parmesan before serving.

Notes

Use freshly grated parmesan for the smoothest sauce and add a splash of broth if the pasta becomes too thick while reheating.
