Ingredients
  

  • 1 lb ground beef
  • 1 cup long-grain white rice uncooked
  • 1.5 cups beef broth
  • 1 cup salsa
  • 15 oz black beans drained and rinsed
  • 1 cup corn
  • 1 cup shredded cheese

Equipment

  • Large skillet or pot
  • Wooden spoon

Method
 

  1. Brown ground beef in a large skillet.
  2. Add onion, garlic, and taco seasoning.
  3. Stir in rice, broth, and salsa.
  4. Cover and simmer until rice is tender.
  5. Add beans, corn, and cheese. Serve warm.
