One Pot Lasagna Soup

Ingredients
  

Soup Base
  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 tbsp tomato paste
  • 28 oz crushed tomatoes
  • 6 cups broth chicken or beef
  • 1 tbsp Italian seasoning
  • 1 tsp basil
  • 1 tsp oregano
  • 0.5 tsp red pepper flakes optional
  • 8-10 lasagna noodles broken into pieces
  • salt and pepper to taste
Cheesy Topping
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese shredded
  • 0.25 cup parmesan cheese grated
  • fresh basil for garnish

Equipment

  • Large pot
  • Wooden spoon
  • Mixing bowl

Method
 

  1. Heat oil in a large pot and brown the ground beef. Season with salt and pepper.
  2. Add onion and garlic; cook until softened.
  3. Stir in tomato paste and seasonings; cook 1–2 minutes.
  4. Add crushed tomatoes and broth; bring to a simmer.
  5. Break lasagna noodles into pieces and add to the pot. Simmer 15–20 minutes until tender.
  6. Mix ricotta, mozzarella, and parmesan in a bowl.
  7. Serve soup in bowls topped with cheese mixture and basil.

Notes

Stir often to prevent noodles from sticking. Add extra broth if soup thickens too much.
