Method
- Heat oil in a large pot and brown the ground beef. Season with salt and pepper.
- Add onion and garlic; cook until softened.
- Stir in tomato paste and seasonings; cook 1–2 minutes.
- Add crushed tomatoes and broth; bring to a simmer.
- Break lasagna noodles into pieces and add to the pot. Simmer 15–20 minutes until tender.
- Mix ricotta, mozzarella, and parmesan in a bowl.
- Serve soup in bowls topped with cheese mixture and basil.
Notes
Stir often to prevent noodles from sticking. Add extra broth if soup thickens too much.
