- Pat chicken dry and season with salt, pepper, and smoked paprika.
- Heat olive oil in large skillet over medium-high heat.
- Sear chicken skin-side down until golden.
- Remove chicken and set aside.
- Add potatoes and cook until lightly browned.
- Add onion, bell pepper, and garlic and cook until fragrant.
- Stir in paprika, oregano, cumin, salt, and pepper.
- Pour in chicken broth and lemon juice.
- Return chicken to pan and cover.
- Cook 20 minutes until chicken is cooked through and potatoes tender.
- Garnish with fresh parsley and serve.
