Method
- Preheat oven to 300°F (150°C).
- Rub ribs with olive oil and season with spice mixture.
- Place ribs in baking dish, add garlic and vinegar, cover tightly.
- Roast covered for 2 to 2½ hours until very tender.
- Uncover, raise oven to 425°F, brush with barbecue sauce.
- Roast uncovered 15–20 minutes until caramelized.
- Rest 10 minutes before serving.
Notes
Bone-in ribs stay slightly juicier, but boneless work well too.
