Main
  • 3 lb country style pork ribs
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 2 tbsp brown sugar
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1.5 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp apple cider vinegar
  • 0.5 cup barbecue sauce optional

Equipment

Method
 

  1. Preheat oven to 300°F (150°C).
  2. Rub ribs with olive oil and season with spice mixture.
  3. Place ribs in baking dish, add garlic and vinegar, cover tightly.
  4. Roast covered for 2 to 2½ hours until very tender.
  5. Uncover, raise oven to 425°F, brush with barbecue sauce.
  6. Roast uncovered 15–20 minutes until caramelized.
  7. Rest 10 minutes before serving.

Notes

Bone-in ribs stay slightly juicier, but boneless work well too.
