Ingredients
  

Fish Base
  • 4 halibut fillets about 6 oz each
  • 2 tbsp olive oil
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 lemon sliced
Parmesan Garlic Butter Crust
  • 4 tbsp unsalted butter melted
  • 3 cloves garlic minced
  • 0.5 cup parmesan cheese grated
  • 0.33 cup panko breadcrumbs
  • 1 tbsp fresh parsley chopped
  • 0.5 tsp paprika
  • 0.25 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Pat halibut fillets dry and place them on the prepared baking sheet.
  3. Drizzle fish with olive oil and season with salt and pepper.
  4. In a bowl mix melted butter, garlic, parmesan, breadcrumbs, parsley, paprika, salt, and pepper.
  5. Spoon the parmesan mixture over the top of each fillet and press lightly.
  6. Bake for 12–15 minutes until fish flakes easily with a fork.
  7. Optional: broil for 1–2 minutes for an extra crispy crust.
  8. Garnish with parsley and lemon wedges and serve immediately.

Notes

For extra crispiness, broil briefly at the end. Avoid overcooking the halibut to keep it tender and moist.
