Ingredients
  

Muffin Batter
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 1 tsp cinnamon
  • 0.5 cup unsalted butter melted
  • 0.75 cup granulated sugar
  • 2 eggs large
  • 1 tsp vanilla extract
  • 0.75 cup milk
  • 1.5 cups fresh peaches diced
Pecan Crumble
  • 0.5 cup all-purpose flour
  • 0.33 cup brown sugar
  • 0.25 tsp cinnamon
  • 0.25 cup unsalted butter melted
  • 0.5 cup pecans chopped

Method
 

  1. Preheat oven to 375°F (190°C) and line a muffin tin.
  2. Whisk flour, baking powder, baking soda, salt, and cinnamon.
  3. Mix melted butter, sugar, eggs, and vanilla.
  4. Add dry ingredients alternating with milk.
  5. Fold in diced peaches.
  6. Mix crumble ingredients until crumbly.
  7. Fill muffin cups and top with crumble.
  8. Bake 18–22 minutes until golden.

Notes

Use ripe peaches for the best flavor and sweetness.
