Ingredients
  

Oatmeal Base
  • 2 cups rolled oats
  • 1 tsp baking powder
  • 0.5 tsp cinnamon
  • 0.25 tsp salt
  • 2 eggs large
  • 1.75 cups milk dairy or plant-based
  • 0.33 cup maple syrup
  • 1 tsp vanilla extract
  • 0.5 cup peanut butter creamy
  • 0.33 cup strawberry jam or raspberry jam
  • 0.5 cup fresh berries optional

Method
 

  1. Preheat oven to 350°F (175°C) and grease a baking dish.
  2. In a bowl mix oats, baking powder, cinnamon, and salt.
  3. In another bowl whisk eggs, milk, maple syrup, and vanilla.
  4. Combine wet and dry ingredients and stir well.
  5. Stir half the peanut butter into the mixture.
  6. Pour mixture into baking dish.
  7. Spoon remaining peanut butter and jam on top and swirl gently.
  8. Bake for 35–40 minutes until set and lightly golden.

Notes

Let the oatmeal bake rest for 10 minutes before slicing for the best texture.
