- Preheat oven to 350°F (175°C) and grease a baking dish.
- In a bowl mix oats, baking powder, cinnamon, and salt.
- In another bowl whisk eggs, milk, maple syrup, and vanilla.
- Combine wet and dry ingredients and stir well.
- Stir half the peanut butter into the mixture.
- Pour mixture into baking dish.
- Spoon remaining peanut butter and jam on top and swirl gently.
- Bake for 35–40 minutes until set and lightly golden.
Notes
Let the oatmeal bake rest for 10 minutes before slicing for the best texture.
