Ingredients
  

Chicken Salad Filling
  • 2 cups cooked chicken breast shredded or diced
  • 6 slices bacon cooked and chopped
  • 1 avocado diced
  • 0.33 cup basil pesto
  • 3 tbsp mayonnaise
  • 1 tbsp lemon juice
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Wrap Assembly
  • 4 large flour tortillas
  • 1 cup shredded lettuce
  • 0.5 cup cherry tomatoes halved
  • 0.25 cup red onion thinly sliced optional

Method
 

  1. Cook bacon in a skillet until crispy, then chop into pieces.
  2. In a bowl combine cooked chicken, bacon, pesto, mayonnaise, lemon juice, salt, and pepper.
  3. Gently fold diced avocado into the mixture.
  4. Lay tortillas flat and divide the chicken mixture between them.
  5. Top with shredded lettuce, cherry tomatoes, and red onion.
  6. Fold sides inward and roll tightly to form wraps.
  7. Slice in half and serve immediately.

Notes

For meal prep, store filling separately and assemble wraps before serving.
