Ingredients
  

Chicken
  • 4 boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 3 peaches sliced
  • 3 cloves garlic minced
  • 0.75 cup dry white wine
  • 0.5 cup chicken broth
  • 0.33 cup basil pesto
  • 2 burrata cheese balls
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp Italian seasoning

Method
 

  1. Season chicken with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a skillet and sear chicken until golden on both sides.
  3. Remove chicken and cook sliced peaches in the same skillet.
  4. Add garlic and cook until fragrant.
  5. Pour in white wine and simmer to reduce slightly.
  6. Add chicken broth and return chicken to the pan.
  7. Simmer covered until chicken is cooked through.
  8. Stir pesto into the sauce.
  9. Top with torn burrata and garnish with basil before serving.

Notes

Use ripe peaches for the best flavor. Serve immediately while the burrata is soft and creamy.
