- Cook chopped bacon in a skillet over medium heat until crispy.
- Remove bacon and reserve 2 tablespoons of bacon fat in the skillet.
- Cook chopped onion in the bacon fat until softened and lightly caramelized.
- Add garlic and cook until fragrant.
- Stir in diced pineapple and cook until softened.
- Add brown sugar, maple syrup, apple cider vinegar, Dijon mustard, black pepper, and red pepper flakes.
- Return bacon to the skillet and simmer on low for 15–20 minutes until thick and jam-like.
- Cool slightly, pulse lightly if desired, and transfer to a jar for storage.
Notes
Best served slightly warm. Great on burgers, toast, sandwiches, and cheese boards.
