Ingredients
  

Bacon Jam
  • 1 lb thick-cut bacon chopped
  • 2 cups fresh pineapple finely diced
  • 1 yellow onion large, finely chopped
  • 3 cloves garlic minced
  • 0.5 cup brown sugar packed
  • 0.25 cup maple syrup
  • 0.25 cup apple cider vinegar
  • 1 tbsp Dijon mustard
  • 0.5 tsp black pepper
  • 0.25 tsp red pepper flakes optional
  • 2 tbsp reserved bacon fat

Equipment

  • Slotted spoon
  • Glass jar
  • Food processor

Method
 

  1. Cook chopped bacon in a skillet over medium heat until crispy.
  2. Remove bacon and reserve 2 tablespoons of bacon fat in the skillet.
  3. Cook chopped onion in the bacon fat until softened and lightly caramelized.
  4. Add garlic and cook until fragrant.
  5. Stir in diced pineapple and cook until softened.
  6. Add brown sugar, maple syrup, apple cider vinegar, Dijon mustard, black pepper, and red pepper flakes.
  7. Return bacon to the skillet and simmer on low for 15–20 minutes until thick and jam-like.
  8. Cool slightly, pulse lightly if desired, and transfer to a jar for storage.

Notes

Best served slightly warm. Great on burgers, toast, sandwiches, and cheese boards.
