- Preheat oven to 350°F (175°C) and prepare a 9×5-inch loaf pan.
- Whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon.
- Mix eggs, melted butter, vanilla, and undrained crushed pineapple in another bowl.
- Combine wet and dry ingredients and stir gently until just combined.
- Fold in coconut or nuts if using.
- Pour batter into prepared pan and bake 55–65 minutes.
- Cool in pan 10 minutes, then transfer to a wire rack to cool completely.
Notes
Do not drain the pineapple; the juice keeps the bread moist.
