Ingredients
  

Base
  • 4 cups cooked jasmine rice day-old preferred
  • 2 cups fresh pineapple diced
  • 1 cup shrimp or chicken/tofu
  • 2 large eggs
  • 1 red bell pepper diced
  • 1 small onion
  • 3-4 green onions
  • 3 garlic cloves
  • 0.5 cup roasted cashews or peanuts
  • 3 tbsp soy sauce
  • 1-2 tbsp fish sauce optional
  • 1-2 tsp curry powder
  • 0.5-1 tsp chili flakes
  • 2 tbsp vegetable oil
  • 1 tbsp sesame oil

Equipment

  • Wok or large skillet
  • Spatula or wooden spoon
  • Knife and cutting board

Method
 

  1. Heat oil and scramble eggs; remove and set aside.
  2. Stir-fry onion and garlic until fragrant.
  3. Cook protein until nearly done.
  4. Add bell pepper and green onion whites; stir-fry.
  5. Caramelize pineapple slightly.
  6. Add rice and seasonings; stir-fry to coat.
  7. Return eggs, add nuts and green tops; finish with sesame oil.
  8. Garnish and serve hot.

Notes

Use cold rice for best texture. Adjust spice to preference.
