Ingredients
  

  • 4 egg whites room temperature
  • 1 cup granulated sugar
  • 1 tsp cornstarch
  • 1 tsp white vinegar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • 2 cups mixed fresh berries

Equipment

  • Stand mixer or hand mixer
  • Baking sheet
  • Parchment paper

Method
 

  1. Preheat oven to 250°F (120°C). Line baking sheet with parchment paper.
  2. Beat egg whites until soft peaks form, then slowly add sugar until stiff and glossy.
  3. Fold in cornstarch, vinegar, and vanilla.
  4. Pipe or spoon meringue into a wreath shape with individual nests.
  5. Bake 75–90 minutes until dry. Cool completely in oven.
  6. Whip cream with powdered sugar until soft peaks form.
  7. Fill pavlova nests with cream and top with fresh berries before serving.

Notes

Assemble just before serving for best texture.
