Ingredients
  

Salad
  • 1 lb chicken sausage sliced
  • 2 cups broccoli florets
  • 1 cup orzo pasta
  • 2 tbsp olive oil
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 2.5 cups chicken broth
  • 0.5 tsp salt adjust to taste
  • 0.25 tsp black pepper
  • 0.25 tsp red pepper flakes optional
  • 0.5 cup Parmesan cheese grated
  • 1 tbsp lemon juice
  • 2 tbsp fresh parsley chopped

Method
 

  1. Heat olive oil in a large skillet over medium heat. Add chicken sausage and cook until golden brown, 5–6 minutes. Remove from pan and set aside.
  2. Add onion and garlic to the skillet and cook 2–3 minutes until softened.
  3. Add orzo and toast 1–2 minutes. Pour in chicken broth, add salt, pepper, and red pepper flakes if using. Bring to a simmer.
  4. Add broccoli, cover, and cook 5–6 minutes until orzo is tender and broccoli is crisp-tender.
  5. Return sausage to skillet, stir to combine, and heat through.
  6. Remove from heat, stir in Parmesan, lemon juice, and parsley. Serve warm.

Notes

Optional add-ins: bell peppers, zucchini, peas, or shredded mozzarella.
