Ingredients
  

Pasta Base
  • 18-20 oz fresh ravioli cheese or spinach
  • 1 bunch asparagus trimmed and cut
  • 1 cup cherry tomatoes halved
  • 3 tbsp olive oil
  • 3 cloves garlic minced
  • 0.25 tsp red pepper flakes optional
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.25 cup Parmesan cheese grated
  • 2 tbsp fresh basil chopped
  • 2 tbsp fresh parsley chopped
  • 1 tbsp lemon juice

Equipment

  • Large pot
  • Skillet
  • Colander
  • Cutting board

Method
 

  1. Bring a large pot of salted water to a boil and cook ravioli according to package instructions.
  2. Drain the ravioli and set aside.
  3. Heat olive oil in a skillet over medium heat.
  4. Add garlic and red pepper flakes and cook until fragrant.
  5. Add asparagus and cook until tender-crisp.
  6. Stir in cherry tomatoes and cook until slightly softened.
  7. Add cooked ravioli to the skillet and toss gently.
  8. Season with salt, pepper, lemon juice, herbs, and Parmesan cheese.

Notes

Add a splash of pasta water if the sauce needs loosening.
