Ingredients
  

  • 1 cup almond flour finely ground
  • 1 cup powdered sugar
  • 2 egg whites room temperature
  • 0.25 cup granulated sugar
  • 1 tsp cocoa powder
  • 1 tsp red food coloring
  • ½ cup mascarpone cheese
  • 0.25 cup unsalted butter softened
  • 0.5 cup powdered sugar
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 300°F (150°C) and line baking sheets with parchment paper.
  2. Sift almond flour, powdered sugar, and cocoa powder.
  3. Whip egg whites with salt until foamy; gradually add granulated sugar until stiff peaks form.
  4. Add red food coloring and fold in dry ingredients until smooth and ribbon-like.
  5. Pipe heart shapes onto baking sheets and tap to release air bubbles; rest 30–45 minutes.
  6. Bake 15–18 minutes; cool completely.
  7. Beat mascarpone and butter, then add powdered sugar and vanilla until creamy.
  8. Pipe frosting onto one shell and sandwich with another; chill 30 minutes before serving.

Notes

Optional: add freeze-dried raspberry powder to frosting for color and flavor.
