Method
- Preheat oven to 300°F (150°C) and line baking sheets with parchment paper.
- Sift almond flour, powdered sugar, and cocoa powder.
- Whip egg whites with salt until foamy; gradually add granulated sugar until stiff peaks form.
- Add red food coloring and fold in dry ingredients until smooth and ribbon-like.
- Pipe heart shapes onto baking sheets and tap to release air bubbles; rest 30–45 minutes.
- Bake 15–18 minutes; cool completely.
- Beat mascarpone and butter, then add powdered sugar and vanilla until creamy.
- Pipe frosting onto one shell and sandwich with another; chill 30 minutes before serving.

Optional: add freeze-dried raspberry powder to frosting for color and flavor.
