Ingredients
  

Salad
  • 5 cups chopped kale stems removed
  • 2 cups shredded green cabbage
  • 1 cup shredded carrots
  • 0.5 cup roasted peanuts
  • 2 tbsp sesame seeds
  • 2 green onions sliced
Peanut Dressing
  • 3 tbsp peanut butter
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp lime juice
  • 1 tbsp honey or maple syrup
  • 1 tsp sesame oil
  • 2-3 tbsp warm water to thin dressing
  • 1 clove garlic minced

Method
 

  1. Wash and chop kale into bite-sized pieces.
  2. Massage kale in a large bowl for 1–2 minutes until softened.
  3. Add cabbage, carrots, and green onions.
  4. Whisk peanut butter, soy sauce, vinegar, lime juice, honey, sesame oil, garlic, and warm water.
  5. Pour dressing over salad and toss well.
  6. Top with roasted peanuts and sesame seeds.
  7. Let salad rest for 5 minutes before serving.

Notes

Massage kale before dressing for the best texture.
